A quantitative variable is a variable with numeric values, such as height, weight, temperature, mass, and so on.  However, not all variables with numeric values are considered quantitative variables.  For instance, social security numbers and other personal identification numbers are not considered quantitative variables.

Furthermore, quantitative variables are variables on which numeric operations can be performed.  It makes sense to think of mean height and median income, but it does not make sense to calculate an average social security number.
